For the preparation of fish and cephalopods, both fresh and frozen, our staff performs washing, sorting and weighing upon receipt of the raw material. The three phases are made for all products, except for cephalopods that will be prepared in block. In this case, they go to the classification and weighing without pre-wash.

With the whole fish destined to be frozen. We do a primary conditioning before sending it to the freezing tunnel. When preparing frozen fillets, we do the filleting. Later, the fillets are washed and are weighed, before the primary conditioning. Then, we put them inside the freezing tunnel at a temperature between -35°C and -40°C. When the product is frozen, we pack it in cardboard boxes, each box identified with its label. Later, the boxes are stored at temperature below - 18 ° C until they are shipped to customers.
